הקינוח הזה הוא ללא ספק קינוח למיטבי לכת. אם יש לכם במטבח משקל דיגיטלי, מדחום לסוכר ותבנית עוגיות מדלן - המתכון הזה בשבילכם. הנה אנחנו מתחילים.
מוס קרמל על תפוחים ברוטב קרמל ווניל ועוד. לא למתחילים (סטיילינג: שרה זיידמן) | צילום: אסף רונן
#### מדלן דבש
המרכיבים:
180 גרם חמאה מרוככת
150 גרם סוכר
20 גרם סוכר חום
2 קורט מלח
30 גרם דבש
200 גרם ביצים (4-5 ביצים מספר 3)
180 גרם קמח
5 גרם אבקת אפייה
\*הכמות מספיקה ליותר קינוחים, אפשר להגיש את שארית העוגיות ליד הקינוח או בנפרד עם קפה או תה.
אופן ההכנה:
1\. מערבלים חמאה, סוכר, סוכר חום, מלח ודבש. מוסיפים את הביצים ואח"כ קמח מנופה עם אבקת אפייה.
2\. משאירים למנוחה כשעה וחצי.
3\. משמנים פעמיים תבנית עוגיות מדלן בגודל בינוני ומקמחים, מנערים את עודף הקמח.
4\. מזלפים את התערובת לתוך השקעים של התבנית ואופים בחום גבוה כ- 210 מעלות, 5-7 דקות. מרכז העוגיה תופח מאוד.
5\. מוציאים ומקררים.
#### תפוחים בחמאת וניל וקרמל
המרכיבים:
8 תפוחים גרנד סמיט קלופים וחתוכים לקוביות (1.5-2 ס"מ)
25 גרם חמאה
250 גרם סוכר
1 מקל וניל חצוי ומגורד
אופן ההכנה:
1\. במחבת, ממיסים את הסוכר, חמאה ווניל.
2\. מוסיפים את התפוחים ומאדים אותם מעט עד שמתרככים, מוציאים ומקררים.
#### רוטב קרמל ווניל
המרכיבים:
250 גרם שמנת מתוקה
75 גרם סוכר
2 מקלות וניל חצויים ומגורדים
אופן ההכנה:
1\. מגרדים את מקלות הוניל לתוך השמנת ומחממים.
2\. בסיר נפרד מכינים קרמל יבש (מסוכר בלבד, ללא מים). כאשר הקרמל מגיע לדרגת הצבע הרצויה, עוצרים אותו עם השמנת בזהירות רבה. ממשיכים לחמם עד שהתערובת אחידה וחלקה.
#### מוס קרמל
לקרם הבסיסי:
150 גרם שמנת מתוקה
150 גרם חלב
60 גרם חלמונים (מ-3 ביצים)
30 גרם סוכר
למוס:
355 גרם קרם בסיסי
660 גרם שוקולד "קרמליה" של וולרונה (אפשר להחליף בשוקולד חלב מאיכות טובה) מומס
530 גרם שמנת מתוקה מוקצפת
אופן ההכנה:
1. מחממים שמנת וחלב בסיר. בקערה נפרדת טורפים את החלמונים והסוכר.
2\. שופכים מתערובת הנוזלים החמה על החלמונים, מערבבים ומחזירים לסיר.
3\. מבשלים עד שהתערובת מגיעה ל-82 מעלות ומסננים.
4\. מכינים את המוס: יוצקים את הקרם החם בהדרגה על השוקולד המומס ויוצרים אמולסיה טובה וחלקה.
5\. מקררים מעט וכשהתערובת מגיעה ל-40 מעלות, מקפלים פנימה את השמנת המוקצפת.
#### הרכבת הקינוח בכוסות
1\. מניחים בתחתית הכוס את עוגיית המדלן (אפשר לקרוץ ולהקטין אותה לפי גודל הכוס).
2\. מניחים על העוגייה שכבה של תפוחים ומעליהם מזלפים מרוטב הקרמל והוניל.
3. מזלפים מעל הכל את מוס הקרמל ומקררים.
\*הקינוח מספיק ל-12 עד 15 כוסות

דבש 200 גרם ביצים (4-5 ביצים מספר 3) 180 גרם קמח 5 גרם אבקת אפייה \*הכמות מספיקה ליותר קינוחים, אפשר להגיש את שארית העוגיות ליד הקינוח או בנפרד עם קפה או תה.אופן ההכנה:1. מערבלים חמאה, סוכר, סוכר חום, מלח ודבש. מוסיפים את הביצים ואחכ קמח מנופה עם אבקת אפייה.2. משאירים למנוחה כשעה וחצי.3. משמנים פעמיים תבנית עוגיות מדלן בגודל בינוני ומקמחים, מנערים את עודף הקמח.4. מזלפים את התערובת לתוך השקעים של התבנית ואופים בחום גבוה כ- 210 מעלות, 5-7 דקות. מרכז העוגיה תופח מאוד.5. מוציאים ומקררים.תפוחים בחמאת וניל וקרמלהמרכיבים: 8 תפוחים גרנד סמיט קלופים וחתוכים לקוביות (1.5-2 סמ) 25 גרם חמאה 250 גרם סוכר 1 מקל וניל חצוי ומגורדאופן ההכנה:1. במחבת, ממיסים את הסוכר, חמאה ווניל.2. מוסיפים את התפוחים ומאדים אותם מעט עד שמתרככים, מוציאים ומקררים.רוטב קרמל וונילהמרכיבים: 250 גרם שמנת מתוקה 75 גרם סוכר 2 מקלות וניל חצויים ומגורדיםאופן ההכנה:1. מגרדים את מקלות הוניל לתוך השמנת ומחממים.2. בסיר נפרד מכינים קרמל יבש (מסוכר בלבד, ללא מים). כאשר הקרמל מגיע לדרגת הצבע הרצויה, עוצרים אותו עם השמנת בזהירות רבה. ממשיכים לחמם עד שהתערובת אחידה וחלקה.מוס קרמללקרם הבסיסי: 150 גרם שמנת מתוקה 150 גרם חלב 60 גרם חלמונים (מ-3 ביצים) 30 גרם סוכרלמוס: 355 גרם קרם בסיסי 660 גרם שוקולד קרמליה של וולרונה (אפשר להחליף בשוקולד חלב מאיכות טובה) מומס 530 גרם שמנת מתוקה מוקצפתאופן ההכנה:1. מחממים שמנת וחלב בסיר. בקערה נפרדת טורפים את החלמונים והסוכר.2. שופכים מתערובת הנוזלים החמה על החלמונים, מערבבים ומחזירים לסיר.3. מבשלים עד שהתערובת מגיעה ל-82 מעלות ומסננים.4. מכינים את המוס: יוצקים את הקרם החם בהדרגה על השוקולד המומס ויוצרים אמולסיה טובה וחלקה.5. מקררים מעט וכשהתערובת מגיעה ל-40 מעלות, מקפלים פנימה את השמנת המוקצפת.הרכבת הקינוח בכוסות1. מניחים בתחתית הכוס את עוגיית המדלן (אפשר לקרוץ ולהקטין אותה לפי גודל הכוס).2. מניחים על העוגייה שכבה של תפוחים ומעליהם מזלפים מרוטב הקרמל והוניל.3. מזלפים מעל הכל
